This great example of a salad meal took ten minutes to make and is as delicious to eat as it is attractive to view. It begins with turkey breast slices seasoned with tarragon and turmeric, which were sautéed with red onions and ginger. This super-lean protein portion is then served with a bed of arugula and sliced avocado, cucumber, and cherry tomatoes…it’s all garnished with blueberries, parsley, paprika, coriander, tarragon, and black pepper.
