Our India-themed salad meal starts with squares of ground turkey and shredded coconut, pan-sautéed lightly on each side and cooked until done with a bit of garlic and red onion, curry powder, red pepper, and parsley The cooked squares are then arranged on a bed of arugula with orange wedges, sliced cucumbers, and halved grape tomatoes. It’s all topped with a generous dollop of ginger-mango chutney and then garnished with parsley, lemon, anise, and black pepper.
