Summer Berry Salad Meal

Summer is in full swing in much of the world right now. In addition to longer and warmer days, this also means that fresh summer berries are now waiting to bring natural sweetness and interest to our daily meals. When creating healthy salad meals the HumanaNatura way and following HumanaNatura’s OurPlate eating guidelines, summer berries find a natural home and can be used at any meal – morning, midday, or night.

Today’s example HumanaNatura meal is a delicious and hearty morning salad that features an omelet filled with diced red onion, cut broccoli florets, and shrimp seasoned with garlic and curry. As the omelet cooks on almost high heat until just slightly crispy on the outside, fresh organic arugula is used as a salad base and then combined with a mix featuring diced cucumber, quartered grape tomatoes, a generous handful of fresh blueberries, and a scattering of anise seeds. When the omelet is done, it’s paired with the veggies and seasoned simply with parsley and black pepper (though adding a few pine nuts to the mix seems like a good idea in hindsight). In any case and whatever berries you use, a great way to start the day and make use of local, naturally fresh mid-summer foods!

Did you know there are two types of diabetes?

Medical researchers have conveniently named them diabetes types 1 & 2. Type 1 diabetes is largely a result of genetics and cannot be avoided. Type 2 diabetes is a result of diet and lifestyle and is avoidable1.

Despite this, type 2 diabetes makes up almost 90% of all diabetes cases and is on the rise in much of the world2. This article will explain what type 2 diabetes is, how it occurs, and exactly how it can be avoided.

Type 2 diabetes & insulin

After a meal or snack that includes carbohydrates – such as sugary foods, starches and refined grains that quickly convert to sugar, or fruit or whole grains that convert to sugar more slowly – sugar enters the blood stream at a relatively fast or slow pace, causing blood sugar levels to rise.

As blood sugar levels increase, the body naturally produces a hormone called insulin, which tells cells in muscles and the liver to absorb and store excess sugar in the form of glycogen or fat. The effect of this is to reduce the amount of sugar in the blood, a key source of physiological energy, and thus to help normalize energy levels.

Spicy Veracruz Style Salad Meal

This decidedly festive salad meal shows how regional cuisines can be re-purposed to make interesting and extra-healthy meals the HumanaNatura way and following HumanaNatura’s OurPlate natural eating guidelines. In this case, we use a simple white fish prepared Veracruz-style to make a spicy and satisfying salad-meal that is as good for you as it is great-tasting.

Today’s meal starts with white fish fillets marinated refrigerated for a few hours in a Veracuz sauce, which you can buy in many supermarkets or make yourself – either from scratch or beginning with a prepared diced tomato sauce. Once marinated, the fish fillets are separated from the sauce and pan-sautéed on medium-high heat with olive oil for a few minutes on each side. The marinade is then added to the pan and simmered with the fish on medium-low heat for a few minutes more.

As the fish cooks, a salad base and veggie mix is prepared, this time with lightly torn arugula, thin-sliced red onion, diced cucumber, halved grape tomatoes, and some pitted and julienne cut medjool dates we had at hand. When the fish is ready, it’s all combined, garnished simply with black pepper, lemon and parsley, and served promptly, making for a welcome day or evening meal that is at once hot, cool, sweet, and delicious!

Simple Five-Food Salad Meal

This quick-to-make salad meal uses just five foods and still is extra-healthy and a feast for the senses. Today’s HumanaNatura salad meal begins with cod pieces (#1) that are pan sautéed with sliced red onion (#2) and a few seasonings (garlic bits, curry, cinnamon, allspice, paprika, lemon, and black pepper). As the fish cooks, we make a salad base and veggie mix of arugula (#3), halved and sliced Persian cucumbers (#4), and cut grape tomatoes (#5). When the fish and onions are done, they are added still warm to our plate, and it’s all garnished with parsley, lemon, and black pepper. Fast, delicious, and healthy…as always, when we prepare our meals the HumanaNatura way…and even when we can count our foods on one hand!

Mandarin Salmon Salad Meal

This yummy meal took just minutes to make. It begins with a salmon filet that is pan seared and then cooked covered with thin sliced red onion, garlic bits, turmeric, paprika  sesame seeds, and red and black pepper. As the salmon cooks, we prepare a salad base and veggie mix of arugula, sliced Persian cucumbers, cut grape tomatoes, and halved mandarin orange pieces (from our friend Ken’s garden). When done, the cooked fillet is then added while still warm to our plate, and it’s all garnished with  parsley, lemon, marjoram, and black pepper. Fast, delicious, and healthy…as always, when we prepare our meals the HumanaNatura way!

Curried Shrimp Salad Meal!

Our showcased meal starts with a stir-fry of shrimp and red onion, seasoned with garlic bits, diced ginger, black pepper, sesame seeds, and a few generous shakes of curry powder. As the stir-fry is cooking, we parboiled a few broccoli florets, which you can see in back. Once the sir-fry and broccoli are done, they’re quickly arranged, still warm, on a bed of mixed greens along with sliced cucumber and pear, and a scattering of grape tomatoes   It’s all garnished with  parsley, lemon, marjoram, just a bit of anise, and black pepper. A quick, optimally healthy, and delicious way to brighten your day at meal time!

Special Holiday Salad Meal!

With many end-of-the-year holidays upon us all, we thought we’d show how a special and naturally healthy holiday meal can be made the HumanaNatura way and following HumanaNatura’s OurPlate guidelines. Other than the extra step of marinating a protein food before oven roasting , this meal is as quick and easy to make as it is festive and inviting to enjoy.

Our naturally healthier version of a traditional holiday meal begins with chicken breasts, which are marinated refrigerated for a few hours in olive oil and wine vinegar with garlic, turmeric, coriander, orange peel, finely chopped onion and figs, a scattering of anise and sesame seeds, and black pepper. The breasts are then oven roasted and basted periodically until done, and allowed to sit briefly before slicing and serving  Once sliced and while still warm, the breast meat is pared with a generous half-plate of greens, julienne-cut cucumber and celery, and halved grape tomatoes. The meal is then garnished simply with roasted pistachios, parsley, garlic bits, paprika, and black pepper. Extra special but not a lot of extra work…so you have more time to spend with family and friends!

Our India-themed salad meal starts with squares of ground turkey and shredded coconut, pan-sautéed lightly on each side and cooked until done with a bit of garlic and red onion, curry powder, red pepper, and parsley  The cooked squares are then arranged on a bed of arugula with orange wedges, sliced cucumbers, and halved grape tomatoes. It’s all topped with a generous dollop of ginger-mango chutney and then garnished with  parsley, lemon, anise, and black pepper. Say Goodnight Twinkie…

Hostess, the U.S. maker of iconic junk food that includes the Twinkie, is reportedly going out of business after an 80 year run. We can only hope so.

While we sympathize with workers displaced by the bankruptcy, from a health standpoint the chain of events leading to Hostess’ shuttering has to be seen as good news.

After all, the real story here is declining sales and a growing lack of market relevancy. People are buying less white bread and unhealthy sugar-rich snack foods, Hostess’ mainstays for more than two generations.

More than likely, the rights to the most well-known Hostess products will be purchased and these products will be produced again. Perhaps in new locations and at lower costs, in an attempt to keep these offerings alive in a world of growing health awareness and stalling demand for toxic food.

And while those of us prone to nostalgia may hope for a Hostess brand renaissance, at HumanaNatura we take a very different view and will say simply, goodnight Twinkie, and hope that it is a very long night indeed.
